Ruben’s Reubens Firestarter Residency
Firestarter is a live-fire kitchen in Liverpool Street, serving dinner Wednesday through Saturday.
Ruben Dawnay is on the grill. He started Ruben’s Reubens at 19, smoking meats from his parents’ garden in Brixton during lockdown. Since then: CODE 30 Under 30, Condé Nast Traveller rising chef award, Meatopia, Soho House. His residency at Firestarter runs on the Grill Tray — snacks, grilled meats, sides, and sauces, loaded onto a tray and brought to your table. Brisket croquettes and hand dived scallops to start. Then an array of flame grilled quality meats to choose for your tray, including sirloin on the bone, pork steak and smoked lamb sausage.
Around 60 seats in the dining room. Nine cocktails including the Flame Game Margarita and the Dirty Fire Martini.
